Jersey Jack Peach Muddle

Fresh peaches are in good supply, and as we near the end of summer apple season is right around the corner.  Both of these orchard fruits served us inspiration for today’s clever cocktail.  For this cocktail kitchen creation we use Laird’s Apple Jack from Monmouth County New Jersey.  Laird’s has been produced by the same family since 1698.  It is an apple brandy by any other name, and wonderful as a base for cocktails.  We add to our Laird’s a bit of lemon, honey and fresh muddled peaches to create a delightful original Bottle Pros tall drink that we have dubbed the Jersey Jack Peach Muddle.    

Jersey Jack Peach Muddle

In a cocktail shaker add:

• ½ Sliced Fresh Ripe Peach (cut into small chunks)
• ½ Ounce Lemon Juice
• ½ Ounce Honey Simple Syrup (1:1)*

Muddle all until the peaches are completely mashed.  Add ice and then:

• 2 Ounces of Laird’s Apple Jack

Shake Vigorously till very, very cold.  Strain into a Collins glass filled with fresh ice.  Top with club soda.  Garnish with a ripe peach slice.

*Honey Simple Syrup

In a small saucepan combine:

• ¼ Cup Honey
• ¼ Cup Water

Slowly bring heat up stirring to combine the two until the honey in thinned. (no need to boil).  Cool and put up in a sterile glass bottle.  Will keep refrigerated 7-10 days.
