Gypsy Eyes

From the pages of Death & Company’s book of Modern Cocktails we bring you this week’s clever cocktail.  Created by Jessica Gonzales in 2009, Gypsy Eyes is a gin based cocktail with a refreshing combination of sweet and tart flavors.  It employs the technique of rinsing the serving glass with Green Chartreuse, lending a subtle underlying herbal accent to the drink.  It is a great addition to our cocktail repertoire and one that is perfect for summer sipping.

Gypsy Eyes

Rinse a cocktail coupe with a splash of Green Chartreuse   

In a shaker glass filled with ice add:

• 1 1⁄2 Ounces London Dry Gin
• 1⁄2 Ounce Aperol
• 1⁄2 Ounce Fresh Lime Juice
• 1⁄2 Ounce Fresh Grapefruit Juice
• 1⁄4 Ounce Simple Syrup

Shake and strain into Chartreuse rinsed coupe.  No garnish needed.
